The Canteen Ledger is an independent editorial record of the Canteen on Clifton Street, Cardiff. It is written from the archive, the local press and the recipes kept in print. The site holds four counters: Menus, Recipes, The street and Practice. Each counter holds numbered entries, and each entry answers one question.
Who writes it
The ledger keeps the record. It reads the archived pages of the canteen, the dated menus, the recipes and the reviews that survive, then states what those sources say. People, suppliers and the press named in an entry are described in the third person. Photographs are generated images made for each entry and captioned as plates.
How an entry is made
An entry begins with one question. The ledger gathers the surviving pages, names each source it read, and writes the answer in plain British English. Every entry carries the date it was last checked.
What it refuses
The site sells nothing. It takes no bookings, publishes no prices and does not speak for the canteen. Corrections and removal of personal data are handled by email at [email protected].
